The berlingot from Carpentras and its dash of sugar

A speciality from Carpentras, in Provence... this striated candy in pyramid shape was created by Pascal Long in 1844, "poet and confectioner", who "created the first Carpentras berlingot", says the commemorative plaque on Serge Clavel's artisan shop, in Carpentras.

Originally, they were flavoured with peppermint. Nowadays, we find them flavoured with lemon, orange, strawberry... and you’ll recognize the real berlingot by its forty or so white trickles of cooked sugar! Maybe the name of berlingot comes from the Italian word berlingozzo, which means "puff cake"?
