A speciality from Lorraine, this bergamot: a candy created in 1850 in Nancy by confectioner Lilich, from Germany. A square and flat candy, flavoured with bergamot oil, made with sugar and glucose. A very simple recipe, but so fresh and delicately flavoured!
Bergamot? Oh, the citrus bergamia... A kind of big fruit with a peel, which looks like a lemon or an orange. They cultivate it in hot countries.
The legend says this fruit was discovered by an Italian, who decided to graft a lemon-tree branch on a pear-bergamot tree! Err, we don’t know if it’s true... but, anyway, nowadays we use bergamot for perfumes (in Cologne water), to flavour tea (Earl Grey, of course) and of course to make delicious candies!
