A speciality from Paris. The name Bercy refers to Bercy wine warehouses, because the sauce is made with white wine, shallots and lemon.

Nowadays, we eat it with beef meat.

But when it was created, in the 19th century, people ate it with horse meat!

Originally, this recipe was created by Bercy inn-keepers for wine traders.
