This cake is an almond-based cake from Pithiviers, Loiret (Central France).

With its puff pastry paste, sugar, eggs, almonds powder, butter, this cake is available with an icing or not.

The little history

The tradition says the pithiviers is the "heir" of the old traditional cake made by Carnutes, a Celtic people who lived in Loiret area. They didn’t use almonds, at that time.

This pretty rare and luxurious good was brought by Romans, later...

The current recipe dates back to the middle of the 17th century, with the invention of the puff pastry.
